Refrigerant is what makes your entire A/C system function. It is pushed through refrigerant lines in a gaseous form, where it absorbs excess heat. It travels to the A/C condenser when it has absorbed enough heat and is condensed into a liquid. As it changes, it sheds the excess heat it picked up. As the heat is whisked off, a pocket of cold air is created. This is then blown into your cabin by the blower motors. Finally, the liquid refrigerant goes to the compressor, where it is turned into a gas again.
Two main problems can affect the refrigerant. It may become contaminated, or it may leak. In either of these cases, your A/C system will be less capable of keeping you cool.
